Curried Pumpkin Dip + Beet Pecan Dip
These bold, nutritious dips are perfect for holiday entertaining! Inspired by my mentor Aimee Greenacre, the Curried Cashew Pumpkin Dip is packed with Asian flavors like sesame oil, ginger, and cilantro, while the Beet Pecan Dip brings a Moroccan twist with cumin and sumac.
Serve with fresh veggies—carrots, cucumber, radish, bell pepper—or warm pita. Easy, vibrant, and full of flavor!
Pesto grilled vegetable salad
This recipe is ideal for a fresh and vibrant spring or summer lunch. It’s packed with a variety of nutritious vegetables and healthy fats, making it both satisfying and nourishing. The bright flavors and wholesome ingredients make it a versatile dish—you can also serve the vegetables as a flavorful side for dinner. Plus, it keeps really well, so be sure to make extra because the leftovers are just as delicious and perfect for quick meals throughout the week!
Buddha Tofu Bowl
Looking for a nourishing, flavor-packed meal to wow your friends (or just yourself)? This Asian-inspired Buddha Bowl is a total knockout! I served it at a girls' dinner night and OMG—every bite was better than the last. Featuring five-spice roasted veggies, basmati rice, tofu-cashew sauté, and a creamy miso tahini dressing, this bowl is endlessly customizable. I topped mine with sautéed spinach, avocado, sprouts, green onions, and furikake for the ultimate umami crunch. Bonus? It tastes even better the next day!
Morning Glory Muffins
I love experimenting in the kitchen, especially with baking. This is my take on a healthier version of the classic morning glory muffin. While most bakeries offer these muffins—and they seem healthy thanks to the carrots—they’re often loaded with refined sugar and processed ingredients. Adding a vegetable doesn’t automatically make a pastry nutritious! So, I reimagined the recipe to be refined sugar-free and optionally gluten-free. I even snuck in an extra veggie: zucchini! Give my version a try and let me know what you think.
Summer Cherry Tomato Salad with Vegan Feta Cheese
A simple, seasonal recipe inspired by a classic Caprese salad—using sun-ripened cherry tomatoes, garden-fresh basil, and vegan feta. It's a fresh, customizable summer dish perfect for showcasing peak-season produce and creative twists on tradition.
Asian Snap Peas + Broccolini
The perfect recipe for a bright green side dish. It only takes two simple steps and 4 ingredients! Feel free to add in any extra vegetables you would like!
Cherry Tomato + Cucumber Salad
This is the perfect recipe for the base of any protein or can also be served as a perfect side dish for lunch + dinner. This dish is only 5 ingredients! Feel free to mix in a few leafy greens or extra herbs. I preferably like this mixed with arugula as a base to a piece of broiled salmon! Enjoy while fresh and crisp!
Tahini Roasted Purple Cauliflower
This my favorite way to prepare cauliflower! Sometimes its rare to be able to find these big beautiful purple cauliflower heads, which is okay! You can use this recipe for almost all vegetables. Rubbing tahini on your vegetables is a great way to bring a creaminess to your dish. The tahini with the maple syrup caramelizes in the oven creating that perfect bite! Let me know what vegetable you try this recipe on!
Lemongrass Thai Steamed Halibut
This simple Thai dish can be made in your own kitchen! It's versatile in what seasonings you can use. Also feel free to experiment with other types of fish. The halibut being steamed with the Thai flavors gives your whole house a nice aroma and brings a delicious juicy flavor to the fish. Enjoy with a side of sautéed beans and mushrooms! Enjoy!
Roasted Sweet Potatoes with Fresh Herbs
This is the perfect recipe for an afternoon snack or yummy side dish! I personally love white sweet potatoes, but you can try any potato you would like! Make sure to keep an eye on your fries the last 10 minutes of cooking, remember, every oven is different and some cook faster than others. Make sure you don’t forget fresh herbs at the market for garnish, I promise they make the dish delish!
Spring Pesto Spaghetti
Southern California decided to be 58 degrees all day on the first day of June. So I decided to create something decadent and warm for dinner. My boyfriend and I had been craving pasta so I decided to surprise him with this yummy dish! I created a delicious creamy spring pesto spaghetti. I Love topping my dishes with the delicious basil from the farmers market. You wont believe this dish is vegan with how creamy it tastes! The Banzas chickpea spaghetti used in this recipe adds protein to the dish and makes it gluten free! Enjoy!
Creamy Lemon Spaghetti Squash with Baked Halibut (dairy free)
Looking for a yummy cream sauce that is dairy free? This dish is a great option if you're craving pasta with a rich decadent sauce, but don't want to feel heavy after you eat! Sub spaghetti squash for the base with fresh halibut and volia you have a delicious creamy lemon spaghetti squash with baked halibut!
Pistachio + parsley crusted salmon over a fennel + kale salad
This is one of my favorite ways to prepare my salmon. The pistachio and parsley crust on the fish is truly the perfect bite. I love adding in the kale and cooked fennel underneath the fish. It gives this decadent fish the perfect amount of acidity it needs. Feel free to enjoy the fish or salad on their own!
Middle Eastern Lentils
This lentil recipe is very easy to prep and quick to cook, but tastes like it's been cooking for hours. I love the flavor cumin brings to this dish. These lentils can be used as a side dish or a main. Lentils are loaded with protein and nutrients leaving your body feeling nourished! Enjoy them with a side of veggies or on top of basmati rice!
Nutty Chocolate Chip Cookies
Here is my simple chocolate chip cookies loaded with goodies. I love adding different textures to my desserts. I folded in walnuts, coconut flakes, and chocolate chips to make these cookies extra yum! I typically try to create my desserts dairy free, and sometimes vegan. This recipe has eggs but can easily become vegan by replacing the eggs with a flax egg! I also recommend ALWAYS topping any cookie with a bit of flaky salt before baking. It gives a perfect sweet + salty flavor to the cookie. Enjoy!
Vegetable Stack with Sun-dried Tomato Pesto
This is the perfect side or main dish for any Italian night! Try whatever vegetables you prefer in the stack. I absolutely love this pesto recipe, but the fun thing about this dish is you can do any type of sauce you would like in-between the vegetables. It all melds together and develops a delicious flavor. I love to add fresh basil on top at the herb to bring in the perfect freshness!
