Superfood Chocolate Bark
Superfood bark? Healthy right? WELL, yes in moderation! Still contains sugar, but all natural sugars. I use Hu chocolate baking gems as my bark base, which is only sweetened with raw coconut sugar! The best part of making your own bark is you can add any toppings you want. I chose chia seeds, goji berries, flaky salt, and pistachios!
Vegan Pancakes 🥞 with Berry Compote
I am always trying to find new breakfast items to add to my personal cookbook. I wanted to create a recipe for vegan pancakes that was easy to double, triple, or even quadruple. I’ve made this recipe very simple for any home chef to follow. The recipe as written will serve about 3 people. You can triple it for a family of 5. I had leftover berries from the farmer market and decide to create a sweet but tart berry compote to top off my pancakes.
Sam Sam’s Sourdough Recipe
I learned this delicious sourdough recipe form one of my best friend Sammi. The best part about this bread, it’s a NO-KNEAD sourdough! It is the perfect recipe for beginners! I love making bread, but am always coming up with an excuse not too! This recipe has showed me just how simple bread making can be. All it takes is keeping a starter alive, 30 minutes before bread to make your dough, and 45 minutes in the morning to bake your bread! You can customize each loaf by adding new fun toppings to the bread or even folding in things like olives or roasted garlic. Original recipe courtesy is from Feasting at Home! Here is a link for making your sourdough starter from Feasting at home, which you will need to do the day before making your bread.
Balsamic Roasted Brussels Sprouts
This is a great recipe because it works for almost any vegetable! These are perfectly cooked brussels with a delicious sweetness from the balsamic vinegar. I also love to use this exact recipe on asparagus! It makes the perfect side dish for any lunch or dinner. Share with me what you try it on!
Quinoa + vegetable stuffed portobello
This is a perfect protein replacement for vegetarians! The quinoa is loaded with plant protein, plus all the protein you get from the vegetables themself. Feel free to play around with any vegetables you want to fill the mushroom with. This dish is easy to make and delicious every time.
Roasted Sweet Potatoes with Fresh Herbs
This is the perfect recipe for an afternoon snack or yummy side dish! I personally love white sweet potatoes, but you can try any potato you would like! Make sure to keep an eye on your fries the last 10 minutes of cooking, remember, every oven is different and some cook faster than others. Make sure you don’t forget fresh herbs at the market for garnish, I promise they make the dish delish!
Nutty Chocolate Chip Cookies
Here is my simple chocolate chip cookies loaded with goodies. I love adding different textures to my desserts. I folded in walnuts, coconut flakes, and chocolate chips to make these cookies extra yum! I typically try to create my desserts dairy free, and sometimes vegan. This recipe has eggs but can easily become vegan by replacing the eggs with a flax egg! I also recommend ALWAYS topping any cookie with a bit of flaky salt before baking. It gives a perfect sweet + salty flavor to the cookie. Enjoy!
Vegetable Stack with Sun-dried Tomato Pesto
This is the perfect side or main dish for any Italian night! Try whatever vegetables you prefer in the stack. I absolutely love this pesto recipe, but the fun thing about this dish is you can do any type of sauce you would like in-between the vegetables. It all melds together and develops a delicious flavor. I love to add fresh basil on top at the herb to bring in the perfect freshness!
Kohlrabi + Fennel Salad
I was inspired to create this dish after eating at Nobu in LA a few weeks ago. I love when kohlrabi is fresh and in season! It is the perfect crunch for a fresh slaw. I was craving a light but decadent feeling dish so I wanted to add in a bit of truffle oil. It was my first time pairing miso with truffle oil, and it was delish! Enjoy this as a side dish for any Asian dinner or even put it on top of a fish taco.
Eggplant Parmesan
I created this recipe while cooking for a family who follows a pescatarian diet, meaning the only animal protein they eat is fish. They were craving chicken parmesan, so i figured why not make it but substitute the chicken for eggplant. This recipe has a wonderful crispy texture on the outside and perfectly cooked eggplant on the inside. To bring the cheesy flavor I replaced the cheese with nutritional yeast. This dish is very nutritious but decadent at the same time!
Curry Roasted Cauliflower
This is my go dish when using cauliflower. I absolutely love the flavor or curry powder! The golden raisins I add give the dish a nice sweetness and chew. Feel free to change up the spices and enjoy the cauliflower as a side to any yummy protein! By far has been my clients favorite side dish.

Craving mac and cheese but gave up dairy a long time ago? Well, here is the perfect healthy alternative for a dairy free mac and cheese! I even threw in a few greens to make it nutrient rich.
