Summer Cherry Tomato Salad with Vegan Feta Cheese
This Summer, I’ve been savoring every tomato I can get my hands on! There’s truly nothing better than a sun-ripened cherry tomato, straight from the garden. Our amazing neighbor recently gifted my roommate and me a bunch of gorgeous yellow and red cherry tomatoes, and we knew we had to turn them into something special.
Inspired by the classic Caprese salad—typically made with heirloom tomatoes, mozzarella, and basil—we put our own twist on it using these freshly picked tomatoes, vegan feta from Virgin Cheese, and fragrant basil from the garden.
This simple, vibrant dish is endlessly customizable—feel free to mix and match with your favorite tomatoes, herbs, cheeses, and a splash of your go-to vinegar!
INGREDIENTS
1-2 cups cherry tomatoes, sliced in half
1/4 cup vegan feta (Virgin Cheese)
10-15 fresh basil leaves
1-2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp maldon salt
1 tsp ground pepper
1 tsp the good grind spice (superfood seasonings)
INSTRUCTIONS
Wash and dry your tomatoes. Slice in half and place in a bowl.
Drizzle your tomatoes with olive oil + balsamic, then sprinkle on your salt, pepper, and good grind spice.
Give you tomatoes a mix, taste and adjust seasonings.
Add in your basil leaves and chunks of feta cheese. Give a stir!
Eat while fresh and delicious.
Stays good in the fridge for up to 3 days.
