I’m a big fan of Indian flavors, and this curry-roasted butternut squash is one of my favorite healthy dinners. It’s topped with fresh dill, pepita seeds, and optionally, creamy goat cheese. I season it with a ginger + turmeric blend from Health On You—so good!
Gabrielle’s Kitchari
Kitchari is one of my all-time favorite comfort foods. This cozy, porridge-like dish is made with basmati rice and yellow moong dal, simmered with healing spices like turmeric, cumin, ginger, and black pepper. A staple in Ayurvedic cooking, it’s gentle on digestion and was my go-to during Panchakarma. I love packing it with veggies like zucchini, squash, broccoli, sweet potatoes, and spinach. Southern California decided to be 58 degrees all day on the first day of June. So I decided to create something decadent and warm for dinner. My boyfriend and I had been craving pasta so I decided to surprise him with this yummy dish! I created a delicious creamy spring pesto spaghetti. I Love topping my dishes with the delicious basil from the farmers market. You wont believe this dish is vegan with how creamy it tastes! The Banzas chickpea spaghetti used in this recipe adds protein to the dish and makes it gluten free! Enjoy!

Kohlrabi + Fennel Salad
I was inspired to create this dish after eating at Nobu in LA a few weeks ago. I love when kohlrabi is fresh and in season! It is the perfect crunch for a fresh slaw. I was craving a light but decadent feeling dish so I wanted to add in a bit of truffle oil. It was my first time pairing miso with truffle oil, and it was delish! Enjoy this as a side dish for any Asian dinner or even put it on top of a fish taco.

Who does not like noodles with a yummy sauce, right? Almost everyone does! I love using only sesame oil and a little salt on my rice noodles, but really nothing beats my peanut satay sauce! My Vegetable Pad Thai recipe below has no protein, but feel free to add in any plant or animal protein you’d like, or even an egg!
