Dairy Free Cornbread

I was never a fan of cornbread until I created this recipe… now that has changed! This is the perfect recipe for a decadent cornbread without the guilt. Its dairy free and can also be made vegan if desired!

INGREDIENTS

  • 1 cup corn meal

  • 1 cup almond milk

  • 1 cup whole wheat flour

  • 1tbsp baking powder

  • 1 tsp salt

  • 1 tbsp nutritional yeast

  • 1 egg (for vegans use flax egg- 1 tbsp ground flax & 3 tbsp water)

  • 1/3 cup olive oil

  • 1/4 cup coconut sugar

 

INSTRUCTIONS

Makes 6-8 muffins

  1. Preheat oven to 400 degrees

  2. Mix together dry ingredients.

  3. In separate bowl mix together wet ingredients then pour wet into dry.

  4. Spray muffin tins and scoop approximately 1/4 cup in each muffin tin.

  5. Bake 15 minutes or until cooked in center. You can check this by sticking a tooth pick or knife into the middle of the muffin. If it comes out clean your muffins are done!
