Curry Roasted Cauliflower

This is my go dish when using cauliflower. I absolutely love the flavour curry powder brings to a dish! The golden raisins I add give the dish a nice sweetness and chew. Feel free to change up the spices and enjoy the cauliflower as a side to any yummy protein! this recipe has been some of my clients favorite side dish!

INGREDIENTS

  • 1 head cauliflower 

  • 1 tsp curry powder

  • 1 tsp turmeric

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp zaatar 

  • 1 shallot, minced

  • ¼ cup golden raisins

  • 2 tbsp extra virgin olive oil 

  • 2 tbsp fresh parsley

 

INSTRUCTIONS

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. 

  2. Prep your cauliflower, buy washing with cold water then cutting into bite size florets. 

  3. Place cauliflower on a baking sheet. Drizzle with olive oil and sprinkle on all of your seasonings. Then add on your raisins and shallot. Mix it all together.

  4. Place in the oven on the middle rack, set time for 15 minutes. Once time goes off remove from over and toss cauliflower around then place back in for an additional 10-15 minutes until golden brown and yummy!

  5. Serve immediately while still warm + delicious!  Bon Appetit!
