Black Bean + Veggie Enchiladas
I created this dish on Cinco de Mayo this year for my clients. They loved how I was able to incorporate veggies into their enchiladas and make them dairy free! Enjoy with green or red enchiladas sauce!
Kohlrabi + Fennel Salad
I was inspired to create this dish after eating at Nobu in LA a few weeks ago. I love when kohlrabi is fresh and in season! It is the perfect crunch for a fresh slaw. I was craving a light but decadent feeling dish so I wanted to add in a bit of truffle oil. It was my first time pairing miso with truffle oil, and it was delish! Enjoy this as a side dish for any Asian dinner or even put it on top of a fish taco.
Vegetable Pad Thai
Who does not like noodles with a yummy sauce, right? Almost everyone does! I love using only sesame oil and a little salt on my rice noodles, but really nothing beats my peanut satay sauce! My Vegetable Pad Thai recipe below has no protein, but feel free to add in any plant or animal protein you’d like, or even an egg!
Eggplant Parmesan
I created this recipe while cooking for a family who follows a pescatarian diet, meaning the only animal protein they eat is fish. They were craving chicken parmesan, so i figured why not make it but substitute the chicken for eggplant. This recipe has a wonderful crispy texture on the outside and perfectly cooked eggplant on the inside. To bring the cheesy flavor I replaced the cheese with nutritional yeast. This dish is very nutritious but decadent at the same time!
Miso Glazed Salmon with Cilantro Crema + Seared Bok Choy
In this recipe I used a simple miso glaze that can be used on any protein, vegetable, or even as a sauce! The flavor of my delicious cilantro creama pairs perfectly with my decadent miso salmon and sesame ginger bok choy. I like to sear my bok choy on the outside so that it remains crunchy on the inside. Make this dish for any dinner guest and they will not be disappointed. It is easy to make and turns out delicious every time!
Curry Roasted Cauliflower
This is my go dish when using cauliflower. I absolutely love the flavor or curry powder! The golden raisins I add give the dish a nice sweetness and chew. Feel free to change up the spices and enjoy the cauliflower as a side to any yummy protein! By far has been my clients favorite side dish.
Butter Lettuce Fish Tacos
I am always looking for ways to make fun dishes without any processed ingredients. These butter lettuce tacos are made with fresh yellowtail from the local fisherman and toped with chipotle crema and a purple cabbage slaw!
Sesame Miso Soba Noodles + Stir Fry Vegetables with Cast Iron Shrimp
This is the perfect recipe for a light and healthy noodle dish that is jam packed in flavor! For all my non-shellfish eaters this recipe is easy to change up the protein while reserving the same flavor concept, or remove the protein at all & keep it plant based! Add different veggies in and don’t be afraid to throw red pepper flakes in for that extra kick!
Broiled Halibut Over Mediterranean Vegetables + Blistered Tomatoes
This is a great mediterranean dish to make for any night! Simple and versatile, I love how many different vegetables I can throw into this recipe! The halibut being cooked with the tomatoes, onions, and garlic brings a delicious juicy flavor to the fish. Enjoy with a side of roasted asparagus or rosemary roasted potatoes.
Homemade Yellow Curry Paste
The depth of flavor a homemade curry paste brings to any dish compared to a caned curry paste is out of this world! This easy and versatile recipe can be used for multiple dishes, not just curries. What are you waiting for, give my homemade yellow curry paste a try!
Cast Iron Chicken Thighs with Pistachio Pesto
A good pesto can make any protein a standout dish, and it only takes a few extra steps to make these chicken thighs stand out! For extra yum, I use a cast iron because it helps crisp the outside of the chicken while leaving it moist on the inside!
Black Bean Brownies
Looking for a sweet treat that is packed with nutrients? These black bean brownies are the perfect choice. These brownies are packed with protein from the beans and the only sweetener used is dates!
Vegan Avocado Mac and Cheese
Craving mac and cheese but gave up dairy a long time ago? Well, here is the perfect healthy alternative for a dairy free mac and cheese! I even threw in a few greens to make it nutrient rich.
