Miso Glazed Black Cod

Talk about melt in your mouth good! Black cod is the best when freshly caught that day. My favorite fish market to go to is Captain Kidds in Redondo Beach. I was lucky enough to show up at the perfect time, they had just received fresh black cod caught two hours before I got there! The miso glaze I marinated the fish in creates the perfect sweet + tangy bite. I love to top the cod off with furikake and micro greens for a bit of color. Try this glaze on any fish of your choice, It even goes well on chicken and tofu!

INGREDIENTS

miso glazed cod

  • 6 (6-ounce) black cod fillets

  • 1/3 cup yellow or white miso

  • 1/4 cup maple syrup

  • 1 teaspoon toasted sesame oil

  • 2 tablespoons mirin (rice wine cooking vinegar)

  • Toasted sesame seeds and micro greens, for garnish, optional

 

INSTRUCTIONS

  1. Rinse fish with cold water and pat dry.

  2. Blend or whisk together miso glaze ingredients. Place fish in a baking dish and pour the glaze over top of the fish.

  3. Keep the fish marinating in refrigerator for anywhere from 30 minutes to 4 hours. The longer you wait the more flavor the fish will have.

  4. Preheat oven to 375 and bake fish for 12-15 minutes depending on the thickness. To create an extra caramelization broil fish for 1-2 minutes on high.

  5. Enjoy while fresh and hot!
