Chocolate Covered Dates stuffed with Almond Butter

Okay, these are to die for! These dates are the most decadent delicious bite there is. My roommate and I absolutely love making these things. The good thing about them is it just takes one date to feel satisfied. I top each date with a pinch of flaky salt leaving your mouth watering over the sweet and salty taste. Feel free to use any chocolate chips you’d like. I prefer Hu dark chocolate baking gems!

INGREDIENTS

10 medjool dates, remove the pits

4 tbsp almond butter

1/2 - 1 cup Hu dark chocolate baking gems

1 tablespoon coconut oil, optional

1 tsp flaky salt

 

INSTRUCTIONS

  1. Using your fingers pull apart the date lengthwise. You should hit the pit. Pull the date open and remove the pit. Insert 1 tsp of almond butter in each date. Close it back.

  2. Melt the dark chocolate and coconut oil in a glass bowl over a double boiler or use the microwave should take 2-3 minutes stirring every 30 seconds.

  3. Dip each of the dates into melted chocolate until completely covered. Place on the parchment paper and sprinkle with pinch of flaky salt and place in refrigerator until chocolate is dry.

  4. Store inside an airtight container in the fridge for up to a week.
