Bhindi Masala

This traditional dish you can find in all Indian restaurants. It consist of stir-fried okra with tomatoes, onions, and aromatic spices creating a delicious Indian flavor. Each restaurant has its own techniques in making this dish, and here are mine!

INGREDIENTS

Serves 4-5

  • 1 red onion (chopped)

  • 2 cups okra (chopped)

  • 1 cup tomato (chopped)

  • 2 tbsp coconut oil

  • 1.5 tbsp minced ginger

  • 1.5 tbsp minced garlic

  • 1 tsp turmeric

  • 1 tbsp curry powder

  • 1 tsp black mustard seeds

  • 1 tbsp garam masala

  • Salt & pepper to taste

 

INSTRUCTIONS

  1. Add coconut oil to pan over medium heat. Once oil begins to pop add all of your spices except salt & pepper to the pan. This step helps the spices become aromatic. After 30 seconds of the spices cooking add in the garlic, ginger, and onions.

  2. Once the onions have browned you can now add the rest of the ingredients into your pan.

  3. Continue stirring and cooking the okra until they are soft and ready to be served. Typically takes about 10-15 minutes to be cooked.

  4. While the veggies are cooking, taste the okra and see what spices you’d like to adjust. I usually end up adding more curry powder and garam masala.

    Tips:

    • If you like you Indian food spicy, add in cayenne powder or a fresh minced chili into the cooking process with the ginger and garlic.

    • Serve over steamed basmati rice
