Our New Life in Colorado

About 3 months ago Riley, Luna, and I made the move to Aspen, CO. The first question we always get is why’d you move to Aspen? Well, we actually are in Basalt, so 30 minutes from Aspen! But the main reason I chose this area is because my sister, Flannery and I now get to live 1 mile from each other. But, little did I know I would end up thriving with my cooking here in Colorado! I got a job offer to cook for a family weeks before we made the move. Having a secure job before we arrived was important for both Riley and I. Riley accepted a job at Snowmass Mountain as a Ski Patroller here and he is also thriving! My new job is a little different then my jobs in the past. In LA I was doing a lot more meal prep/delivery & events. Now I get the opportunity to cook for a family of four and their nannies three days a week! They have a beautiful home in Aspen and the dreamiest kitchen, which is great for me! I love being able to change up what I make for the family each day and of course repeat some of my staples that they love!

My staples:

  • tuna salad

  • chicken pot pie

  • chimichurri skirt steak

  • gf/df banana muffins

  • vegetable broth

  • chicken curry

  • dill & dijon salmon

This has been a brutal winter for sickness as i’m sure most of you can relate. My homemade vegetable broth has been a hit this winter helping the family to keep their immune systems strong. As Spring time approaches, I am getting excited for warmer/longer days! Unfortunately, the family will be heading back to NYC for the summer, but I have some exciting new opportunities in the works for our summer in Colorado!

Meanwhile back in California

My biggest achievement in 2023 was buying my first home in Big Bear Lake, CA! I flipped this home and created my first short term rental ever! The Big Blue is what I named my home. I remember back in April I toured maybe 10-15 homes but when I walked into The Big Blue, I just knew it was the perfect home. My realtor was like “Really?” She didn’t see it for me, but after all the hard work Riley and I put into the home she was amazed as well as many others! I honestly couldn’t be prouder of The Big Blue and how well its doing already! It is a beautiful cabin located on the northern side of the lake, furnished with all CB2 and crate and barrel items. The cabin sleeps 8 guest and has a brand new hot tub ready to keep you warm on chilly nights! I work with a management company to allow direct bookings to keep from those crazy airbnb & vrbo charges!
