Tahini Roasted Purple Cauliflower

This my favorite way to prepare cauliflower! Sometimes its rare to be able to find these big beautiful purple cauliflower heads, which is okay! You can use this recipe for almost all vegetables. Rubbing tahini on your vegetables is a great way to bring a creaminess to your dish. The tahini with the maple syrup caramelizes in the oven creating that perfect bite! Tahini Roasted Purple Cauliflower

Serves 4

Cook Time: 15 min

Total time: 25 min

INGREDIENTS

  • 2 head purple cauliflower

  • 2 tbsp extra virgin olive oil

  • 1/2 cup tahini

  • 1 tbsp garlic paste

  • 1 tbsp maple syrup

  • Maldon (flaky) salt to-taste

  • pepper to taste

INSTRUCTIONS

  1. Preheat oven to 400 degrees and line one baking sheet with parchment paper

  2. Wash and dry your cauliflower. Then slice into four large pieces and place in a large mixing bowl

  3. Drizzle your cauliflower with tahini, olive oil garlic paste and a nice pinch of salt and pepper.

  4. Mix your cauliflower around in the bowl until each piece in covered in your tahini goodness.

  5. Place your cauliflower on baking sheet, leaving space between each piece. Drizzle with maple syrup, make sure each piece gets a little bit.

  6. Bake for 15-20 minutes until crispy and yummy. Taste and adjust your seasoning with salt + pepper!
