Stir-fried Sesame Eggplant
This recipe is easy to make and perfect for any Asian dinner night! The recipe is one of my favorite ways to prepare eggplant! I created this dish on sashimi night with my family. I wanted to add a yummy vegetable to the spread. If you love a sweet + spicy food this recipe is perfect for you.
Stir-fried Sesame Eggplant
Serves 4-6

INGREDIENTS
Sesame eggplant
2 large globe eggplants
1 tbsp mirin
1 tbsp sesame oil
1 tbsp maple syrup
2 tbsp tamari
1 tbsp sriracha or chili paste (use as much as you'd like, spice is a preference)
1 tbsp garlic, minced
1 tbsp salt (for removing moisture from eggplant)
2 tbsp sesame seeds, toasted
1 tbsp green onions, diagonally sliced
INSTRUCTIONS
Prepare the sauce, whisk together tamari, sesame oil, maple syrup, mirin, garlic, and your spice. Place the bowl next to your stove.
To prepare the eggplant, cut off the top and bottom of the eggplant. Then cut it in half long ways. Place each half cut side down and slice into ¾ inch pieces. Sprinkle the eggplant with your salt and let sit in a bowl that can drain for 30 minutes, then dry with a paper towel. This removes the moisture from your eggplant, creating a crispier texture. (this is only for globe eggplant, Japanese eggplant you can use right away).
Start to heat a wok or large pan over medium heat. Add in a dash of sesame oil.
Begin to stir fry your eggplant, until golden brown on each side 4-6 minutes. Pour your sauce over the eggplant and continue stirring your eggplant to coat each piece. Remove after sauce and eggplant are combined.
Top with sesame seeds + green onions, adjust your seasonings if you prefer! Eat while warm + delicious.
