Cauliflower Mash

Y’all, this cauliflower mash is life changing! If you like good ole southern mash potatoes, you will love this healthy version even more.

INGREDIENTS

Serves 5-6

  • 2 heads cauliflower

  • 1/4 cup olive oil

  • 2 cloves garlic

  • 1 tsp salt and pepper

  • 2 tbsp nutritional yeast

 

INSTRUCTIONS

  1. Fill large pot half way full with water and begin to boil.

  2. Chop cauliflower into 1 inch pieces and place in boiling water for 10-15 minutes, or until cauliflower is tender.

  3. Strain cauliflower, then pour into your blender and add the rest of the ingredients.

  4. Serve immediately after blending. Optional: add sautéed spinach on top of mash.
