Roasted Sweet Potatoes with Fresh Herbs

This is the perfect recipe for an afternoon snack or yummy side dish! I personally love white sweet potatoes, but you can try any potato you would like! Make sure to keep an eye on your fries the last 10 minutes of cooking, remember, every oven is different and some cook faster than others. Make sure you don’t forget fresh herbs at the market for garnish, I promise they make the dish delish!


Roasted Sweet Potatoes with Fresh Herbs 

Serves 3-4

Prep time: 10 mins

Cook Time: 30 mins

Total time: 40 mins

INGREDIENTS

  • Roasted potatoes

    • 2 white sweet potatoes or yams

    • 2 tbsp olive oil

    • 1 tsp maldon salt

    • 1 tsp pepper 

    • 1 tbsp fresh thyme or lemon thyme (optional)

    Fresh herbs 

    • 1 tbsp parsley leaves, minced

    • 1 tbsp fresh dill, minced 

INSTRUCTIONS

  1. Preheat the oven to 375-400°F, depending on how strong your oven is. 

  2. Wash your potatoes, and slice them into rustic french fries. 

  3. Lay potatoes on a baking sheet and drizzle with olive oil, salt, and pepper. If you have fresh thyme or rosemary add it now. 

  4. Place potatoes in the oven and set the timer for 30 minutes. At the 15 min mark remove your potatoes from the oven and give them a shake + flip then place back in the oven for 15 more minutes or until golden brown and crispy.  

  5. While the potatoes finish cooking, mince your fresh herbs for garnish.

  6. Remove the potatoes from the oven, sprinkle with your herbs and adjust seasoning. 

  7. Serve immediately while still warm + delicious!  Bon Appetit!
