Vegan Avocado Mac and Cheese

Craving mac and cheese but gave up dairy a long time ago? Well, here is the perfect healthy alternative for a dairy free mac and cheese! I even threw in a few greens to make it nutrient rich.


INGREDIENTS

Serves 4-5

Sauce

  • 1 ripe avocado

  • Juice of 1 lemon

  • 1 cup basil

  • 1/4 cup cilantro

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/4 tsp paprika

  • 4-6 tbsp nutritional yeast

  • 1/2 cup almond milk

Pasta

  • 8-10 oz. any pasta you prefer

  • 3 tbsp olive oil

  • 4 cloves garlic

  • 3 tbsp coconut or oat flour

  • 1 cup almond milk

INSTRUCTIONS

  1. Blend all the sauce ingredients together in a high speed blender until smooth.

  2. Prepare pasta according to package instructions.

  3. While pasta is cooking. Sauté’ over medium heat garlic, olive oil, flour, and milk. Make sure to whisk flour in so no clumps form.

  4. Once thickened remove from heat and pour avocado mixture into sauce base, whisk together.

  5. Pour sauce over cooked and strained noodles. Top with fresh chopped basil or more nutritional yeast.
